Mai is a native of Norway and grew up hiking in the mountains and picking mushrooms, berries and fruit from the abundant nature of the north. This is still a passion for her, and she can frequently be found foraging in the forests and coastlines of California looking for medicinal edibles. “Food as medicine” is her motto, and she loves infusing healthy and delicious food with healing herbs to create nourishing and healing meals.
This fusion of cuisine and healing herbs developed as a result of Mai’s extensive travels. She spent several years “plugging her hands into the dirt”, growing her own food, and learning about native cultures, food traditions, permaculture and gardening through regions of Southeast Asia, Africa and Australia.
Mai has had her own challenging journey to health, and has let go of old habits and ventured into a diet rich in whole and medicinal foods. In her experience, the body is a self-healing mechanism; when listened to and given the proper nourishment, care and attention, it adjusts itself to vibrant health.
